We pickled enough onions to fill two jars in the end. That was the good bit. What wasn’t quite so good was the fact that one of the jars leaked, so it wasn’t airtight.

With so many onions harvested from the garden we decided that the best way to save them for winter was pickling. Here’s how we did it.
With summer coming to an end, we have pulled our onions out of the plot. Although some are small, they are well matured, with satisfying brown papery skins.
In an effort to get the plot ready for the first planting of the season, this morning saw us digging up the last of the onion harvest.
Our first onion was a tasty base of a hearty meal, but what appeared to be a monster when still in the soil was only half the size we’d expected when we started slicing it up.
