We’ve harvested far too much beetroot to eat in one go. The most common method of preservation is, of course, pickling, but as that’s not to everyone’s taste we’re boiling and freezing this batch.

Having ignored the beetroot since it was planted, we half expected to find nothing but mush as we dug up the first roots. But we were in for a pleasant surprise.
