<em>Coconut buns</em></p>
<p>For this week&#8217;s bake-off it&#8217;s coconut buns, which for Australian and New Zealand readers are apparently very like Anzac biscuits. The recipe below makes about 50 biscuits.</p>
<blockquote><p><em>Ingredients</em><br />
450g (1lb) self raising flour<br />
225g (0.5lb) butter or margarine<br />
285g (10oz) caster sugar<br />
115g (4oz) desiccated coconut<br />
2 large eggs</p>
<p><em>Method</em><br />
Rub the margarine into the flour until it forms fine bread crumbs. Now add the sugar and coconut and mix well. You can do all of this in an electric mixer if you&#8217;d rather save on the arm-work. When all blended together, stir in the beaten eggs. It should now start to stick together, but if it is still too dry and bread crumb-like, add an extra egg to help it along.</p>
<p>When it starts to clump, roll it into small balls (slightly smaller than a golf ball) and flatten a little. Lay them out onto well-greased baking trays and cook for 20 minutes at 160 degrees C (350 degrees F) until slightly golden.</p>
<p>Remove from trays immediately and allow to cool on racks.</p>
